Vietnamese Wintermelon Soup

A light and comforting Vietnamese soup made with pork neck bones and wintermelon. This flavorful dish is perfect for warming up after Thanksgiving. It features tender meat, sweet wintermelon, and seasoned broth, garnished with fresh green onion.

What you need

bunch green onion

cup water
lb pork bone

lb winter squash

tbsp chicken bouillon powder
Instructions
1: Parboil your pork neck with enough water to cover them and 1/2 tbsp salt. Once boiling, dump water and clean the bones. Clean the pot and add back the cleaned neck bones. 2: To the pot with cleaned neck bones and 1/2 tbsp salt, add 6 cups of water. Bring to a boil, then lower to simmer for 3 hours so the bones are tender. 3: While waiting, cut and clean the Wintermelon. Remove the dark outer shell, remove the seeds, and cut into 1" cubes. Set aside. 4: After 3 hours of cooking, add the Wintermelon to the stock and allow to cook for 15 minutes. 5: Season the broth with chicken powder, sugar, and MSG. Taste and adjust to your liking, garnish with sliced green onions. 6: Serve with rice and pickled/fermented side dishes.View original recipe
